Almond Butter Superfood Cookies

On the hunt for something that turns your afternoon crash into an afternoon delight?
My girl Lindsay, who slays in the kitchen, was kind enough to put together a scrumptious midday energy boost recipe just for us. I was hooked after the first bite and seriously you guys it was so easy to make! Now, go get your cute booty in the kitchen and whip yourself up a little something something.

Almond Butter Superfood Cookies

Ingredients:

1 cup blanched almond flour

1/4 cup hemp seeds

2 T. ground chia seeds (I love Salba Chia)

1/2 cup almond butter (or favorite nut butter)

4-6 T. agave nectar (depending on how sweet you want it. Can sub in honey or maple syrup depending on preference)

2 T. raw pepitas

2 T. craisins

2 T. pecans

2 T. mini dark chocolate chips

Directions:
1. Place almond flour, hemp seeds, and chia seeds in a food processor. Process for 20 seconds.
2. Add almond butter and agave and process again until the batter balls up.
3. Use a spatula to scrape down the sides and chop up the ball. Process again for another 10 seconds.
4. Roll the batter into ping pong sized balls and set aside on a plate. Mine made about 16 balls.
5. Place your desired toppings into the palm of your hand. Then take the ball and press it in between your palms. The ball will flatten out into a cookie and the toppings will be pressed in the top of one side. Place the flattened cookie back on the plate.
6. For the chocolate drizzle, place chocolate chips in the microwave for 1 minute, or until melted. Use a fork to drizzle on top.
7. Pop them in the fridge for an hour so they set and the chocolate hardens!
